Guacamole


Preparation: 10 minutes

Guacamole is without a doubt my favorite Mexican condiment and dip. It takes just a few minutes to throw together and is always worth making your own. The fresh stuff tastes infinitely better than the processed goo you squeeze from a tube, and it costs less to make yourself. On top of all this, it is literally the easiest thing to make EVER!



Ingredients:
3 Avocados
1 Large Garlic Clove
1 Lime
Handful of fresh Coriander
Sea Salt and Cracked Black Pepper
(Optional: Red Onion, Chilli, Tomato)

Method:
Slice your Avocados in two, cutting around the stone in the middle. Remove the stone, and scoop the flesh into a bowl. Mash the Avocado to your desired consistency, but remember that there is a bit more mixing to do so don't bring it all the way yet.

Finely chop the garlic, and add this straight to the bowl. Juice the lime and add this to your avocados. The acidity of the lime adds an amazing zing, and also keeps the avocado green. Avocados have a bad track record for turning brown before you need them. 

Finally, roughly chop the coriander and add this with a pinch of salt and pepper. Mix everything together well and taste for seasoning. At this point you have a very basic Guacamole, and it will already taste amazing, but if you want to bring it to the next level you can add half a finely diced red onion, and a red chilli just chopped into rings. This will also add great colour and a bit of crunch to the Avocado mixture.

This can be used as a dip for veg or tortilla chips, eaten in salads, or as a condiment for Mexican styled foods such as burritos, fajitas and tacos.
