PULLED PORK

Pulled Pork is one of the tastiest things you can ever eat, and coupled with my tasty Guacamole and Salsa you have the makings of a winner. I love visiting burrito shops. They are fast food that can be made very healthy and extremely tasty! Unfortunately, there is none in my hometown of Shannon, Co. Clare. This is why I had to perfect the Burrito, and believe me when i say that this is the closest you will get to that burrito shop taste in your own kitchen! This is the easiest recipe in the world, it is near impossible to mess it up, and it will serve at least 6 people!



Ingredients:

1kg Pork Loin 
 1tbsp Cumin Seeds
1tbsp Coriander seeds
1tbsp Garlic Powder
1tbsp Cayenne Pepper
2tbsp Smoked Paprika
1tbsp Oregano
2 Bay Leaves
Cracked Black Pepper
1tsp Sea Salt
Splash of Worchestershire Sauce
2litres Water 

Method:

To start take your meat and trim off any excess fat. Then cut it into 6 equal sized pieces, and put it straight into your pot. Fill the pot with the water to cover the meat, and then bring it to a boil.

While the water is coming to a boil,  you can toast your cumin and coriander seeds. Just put them in a dry frying pan, and give it a good bit of heat. Shake the pan every so often to make sure your toasting them evenly and not burning them. Stop toasting them as soon as they start to become more aromatic (this is the natural oils in the seeds being released).

Grind your seeds up to a powder, and add them to the pot, and add the rest of your ingredients.

Give a good stir, and once the water comes to a boil, turn it down to a medium heat, put a lid on and simmer it for about three hours. 

You'll know it's done when you can cut the meat with your wooden spoon, and at this stage if you still have a lot of water remaining in your pot you can turn the heat up and reduce the water to about an inch of the pot (this will become your sauce).

Take two forks and start to "Pull" your pork.

Alternatively you could use this recipe to slow cook the pork in a crock pot. This can take all day, but by the end you will have lovely tender chunks of meat, and wont have to worry about reducing the water to a sauce, as the meat will have cooked in the spices for longer.
