Pork Potsticker Dumplings

Preparation: 30 Minutes

Pork dumplings are a fantastic oriental dish that i love. You can buy them frozen from your local Asian supermarket and they are lovely, but relatively expensive! This recipe is cheap, packed full of flavor and super easy to make. I'm using pre-made dumpling pastry that you can buy pre-rolled, pre-floured and are found in the Asian supermarket. and this speeds the process along. If you want to make fresh pastry, its simply boiling water and flour and a pinch of salt but it will add an hour or more to your cooking time!! This recipe is my take on them, and will easily put a rest to your craving for oriental food! These freeze great too, so any that you don't cook can be sealed in a freezer bag and kept in there for up to three months.

Beef Stroganoff




























Preparation: 15 minutes 

Cooking Time: 3 hours

This wonderful mushroomy dish is my take on the classic Beef Stroganoff. This rich beef stew originally hails from Russia (if you couldn't guess by the name). This dish comes together simply and with just a few key ingredients. If you've never had this dish you will love it, and if you are familiar with it give this one a go, it won't disappoint!

Doolin Craft Beer and Roots Festival 2015


Now in its third year, The newly re-christened "Doolin Craft Beer and Roots Festival" is only getting bigger and better. This year it boasted over 20 craft breweries and to compliment the beer, a live band every hour and not to mention the food! Oh god, the smell was amazing. This is the first year I heard about the festival, let alone any festival like this held in Co. Clare. Being a Clare man, it seemed only natural to drag the girlfriend Aisling aka Pale Girl and meet up with one of my best friends to make it a weekend worth remembering.

Chilli Dog


Preparation: 10 minutes

Cooking Time: 10 minutes

This is the ULTIMATE leftovers dish. From fridge to table in just 15 to 20 minutes and can be prepared just as easily in the kitchen or on a BBQ. The main ingredients being a leftover pot of Chilli, and your favorite dog, or sausage. For the authentic "dog" taste i would recommend a good sized German style sausage (but not cheap frankfurters). Alternatively a nice steak and black pepper sausage from your local butchers would be absolutely amazing. This works perfectly well with a nice freshly made chilli, but is ten times better if it a day or two old.

Habanero Corn Salsa


Preparation: 5 minutes

Cooking Time: 15 minutes

If you don't know it by now, I love spicy food. This salsa is super sweet, spicy, fresh and it makes the perfect dip. Once you put this on the table it will be gone in a matter of seconds, so make sure you have have enough ingredients for a couple of batches! The habanaro chilli is EXTRA SPICY but it has an unmistakable flavor that makes this salsa wonderful, but be warned, it's your decision to go seeds in or seeds out!!

Chilli Con Carne




Preparation: 15 minutes

Cooking Time: 3 hours

This classic is one of my favorites! The name literally translates to my favorite things: Chilli with Meat! This recipe is all about building layers of flavour and although it isn't quite a quick recipe, believe me when i say it is worth the effort. The best thing about a chilli is that the leftovers taste even better (if there's any left that is!!). This goes great over rice but i prefer it with chips!

Vegetable Stuffed Peppers


Preparation: 10 Minutes

Cooking time: 40 Minutes

We all love peppers, but we don't give them all the attention we should. Every once in a while, the pepper deserves to be its own dish as opposed to being just another ingredient used to make something else taste better. You can eat these Stuffed Peppers with a knife and a fork, or you can pick it up with your hands and get stuck right in, which makes these guys perfect for BBQ season, and it's a great vegetarian option. This recipe can be cooked on a BBQ just as easy as in the oven, so make sure that you keep these in mind on the next sunny day.

Caramelised Red Onion Chutney

Preparation: 15 minutes

Cooking Time: 1 hour

This awesome chutney is a sweet, savory delight. It is not only the perfect dinner party food, served with a nice cheese and wine, but I personally find it to be an amazing burger topping, and it turns the most boring sandwich into the best. This can be made, and kept in your fridge for up to three months, and even though you can eat it as soon as it cools down, it tastes its best after a month. This recipe makes enough to fill a 250g jar to the top, but if your making it for an occasion simply double the recipe and this works perfectly.

Ultimate Jalapeno Poppers


Preparation: 10 minutes

Cooking time: 25 minutes

In Ireland up until recently it was near impossible to find fresh jalapeno peppers. As soon as i discovered they sold them in supermarkets finally, they had to be put to use A.S.A.P.  A fantastic finger food, the jalapeno popper is a favorite among so many! Usually coated in a spiced breadcrumb, this recipe takes them to the next level. Smokey streaky bacon rashers are the not so secret ingredient, and it makes them AWESOME! If you're not a jalapeno popper fan, you will be after these!

Courgetti Bolognese




Preparation: 15 minutes

Cooking Time: 2 hours 45 minutes

Everyone loves Spaghetti Bolognese. It is a staple dinner in houses all across the world, and everyone always looks forward to spaghetti night. This is a twist on the classic, that is not only super tasty, but so much healthier. By Replacing the spaghetti with courgettes your not only getting more vegetable goodness, but it cuts the carbs almost completely out of the meal. This is one to try for sure.

Aubergine and Tomato Pasta



Preparation:  15 minutes

Cooking Time: 35 minutes

This Mediterranean inspired dish is packed full of flavour, so don't be put off by the lack of meat! The rich tomato sauce combined with the aubergine is a real treat and it is so inexpensive. Although I do recommend you use fresh herbs in this recipe if they are not easily accessible to you you can substitute a teaspoon of the dried stuff. 

Chorizo and Red Onion Salad


Preparation: 10 Minutes

Cooking Time: 5 Minutes

This is a quick, tasty salad and is very easy to construct. It should be served warm, but this isn't at all necessary. Its all about the preparation with this one as it pays off to be one step ahead of yourself. I personally don't season this salad because I expect the saltiness from the feta, and the pepper kick from the rocket. Chorizo is an amazing cured sausage and although it is fully cooked and tastes amazing already, it really doesn't hurt to get it a bit crispy on the  pan. The best part about this is it releases its amazing paprika flavour which can be utilized in creating the greatest salad dressing you'll ever taste!!

Chicken and Sweetcorn Soup


Preparation: 10 minutes

Cooking Time: 20 minutes

No matter what Chinese restaurant you frequent, you are bound to find this soup on the menu. Chicken and Sweetcorn soup is a simple dish to throw together in just a few minutes, with a minimum of ingredients. People don't really make their own Chinese food at home because it never really hits the mark, but honestly, people won't be able to tell the difference with this recipe!

Guacamole


Preparation: 10 minutes

Guacamole is without a doubt my favorite Mexican condiment and dip. It takes just a few minutes to throw together and is always worth making your own. The fresh stuff tastes infinitely better than the processed goo you squeeze from a tube, and it costs less to make yourself. On top of all this, it is literally the easiest thing to make EVER!

Roast Chilli Salsa


Preparation Time: 20 minutes

Cooking Time: 20 minutes

This is a wonderfully fresh, zingy salsa, with a kick. Salsa is a natural accompaniment to any Mexican dish, and this one doesn't disappoint. This recipe is for chilli lovers, but for a milder version you can always use less chilli. Roasting the veg adds a whole new dynamic to this recipe, and especially the chilli, as it allows the heat to permeate every part of the salsa while sweetening the flavor.

PULLED PORK

Pulled Pork is one of the tastiest things you can ever eat, and coupled with my tasty Guacamole and Salsa you have the makings of a winner. I love visiting burrito shops. They are fast food that can be made very healthy and extremely tasty! Unfortunately, there is none in my hometown of Shannon, Co. Clare. This is why I had to perfect the Burrito, and believe me when i say that this is the closest you will get to that burrito shop taste in your own kitchen! This is the easiest recipe in the world, it is near impossible to mess it up, and it will serve at least 6 people!

PULLED PORK BURRITOS

I love food, so many types of food. If you asked me a couple of years ago what my favorite food was, i probably would have told you "Pizza", or something similar. Pizza is awesome, but i can no longer batten down on what my favorite is and give just one food pole position. Every week something new enters the lead. There are endless, amazing foods that taste so good. 
From simple salads, to juicy burgers and spicy curry to creamy soup, each day calls for something different.  

Over the next series of posts, i will show you how to make the best burrito you will ever have at home, with amazing fresh ingredients and wonderful flavors. 
My favorite thing about burritos is that every one has different tastes, and a burrito is fully customisable, meaning EVERYONE can be happy at dinner time.
