Chilli Dog

This is the ULTIMATE leftovers dish. From fridge to table in just 15 to 20 minutes and can be prepared just as easily in the kitchen or on a BBQ. The main ingredients being a leftover pot of Chilli, and your favorite dog, or sausage. For the authentic "dog" taste i would recommend a good sized German style sausage (but not cheap frankfurters). Alternatively a nice steak and black pepper sausage from your local butchers would be absolutely amazing. This works perfectly well with a nice freshly made chilli, but is ten times better if it a day or two old.
This is the ingredients list and method to make one Chilli Dog, but you can make as many as your pot of chilli allows!

Ingredients 
Your Favorite Sausage
Hot Dog Bun 
Cheddar Cheese
Sour Cream
Big Handful Coriander 
3 Spring Onions
Clove of Garlic

Method:
Start by getting the chilli on the heat. If you are BBQing make sure the coals are hot enough (covered in ash with a red glow), or if your using a grill turn it up full! Get the dog on the heat, and turn it every minute or so to make sure each side gets cooked evenly. The longer its cooking the more frequently you have to turn it. If your buns are pre-cut thats ok, but if they aren't you want to slice them down the middle (not all the way through) on top of the bun. 

Add 1 part sour cream to 2 parts water. This will make it easier to work with so you dont end up with uneven blobs. Now slice your spring onion finely on a slant, and roughly chop the coriander. You can grate the cheese now too, or wait to grate it straight over the finished dog. The last step is to toast your bun, and with the clove of garlic rub it off the inside of the bun. This will add another dimension of flavor to the finished product that you are not expecting!

Assembly:
Place the bun in its final resting place before being demolished, and add an even layer of chilli. Next its time for the sausage. Add a good amount of chilli over the sausage, and add your grated cheese quickly to get maximum meltage. Garnish with a handful of spring onions and coriander, and drizzle as much sour cream over the top as you like. 

This is the messiest food and although you will struggle to pick it up it is definitely worth the attempt. I would also recommend a full set of cutlery for the aftermath! This is one of my favorite things ever, and i implore you to give it a go!
