Caramelised Red Onion Chutney

This awesome chutney is a sweet, savory delight. It is not only the perfect dinner party food, served with a nice cheese and wine, but I personally find it to be an amazing burger topping, and it turns the most boring sandwich into the best. This can be made, and kept in your fridge for up to three months, and even though you can eat it as soon as it cools down, it tastes its best after a month. This recipe makes enough to fill a 250g jar to the top, but if your making it for an occasion simply double the recipe and this works perfectly.

Ingredients:
600g (4 large) Red Onions
100ml Red Wine Vinegar
50ml Balsamic Vinegar
75g Brown Sugar
1/2 tsp Cayenne Pepper or Chilli Flakes
1tsp Caraway seeds
2tsp Olive Oil
10g Butter

Method:
Slice the onions thinly, and get them into a heavy bottom pan on a medium heat with some olive oil and a nob of butter. Caramelising your onions is not a quick process, but it is easy and necessary. The key thing to know when cooking your onions it to have as much of them touching the bottom of the pan as possible. This should take about 40 minutes, and every 5 or 6 minutes make sure the onions are not burning, and if you find them getting a bit dry just add a splash of water. The less you move your onions the more intact they will stay which looks nice in the finished product but isn't necessary.

You'll know your onions are done when they are reduced a bit, darker and a sticky consistency. When you get to this stage add the vinegar, sugar and spices. Give this a good stir, then let it simmer until it is reduced to a sticky thick consistency, the consistency of jam this shouldn't take more than 20 minutes. At this point, take it off the heat and allow it to cool fully, then transfer it to a sterilized, airtight resealable jar. 

You will be everybody's best friend once they taste this, and if presented nicely can make a great gift.
