Chorizo and Red Onion Salad

This is a quick, tasty salad and is very easy to construct. It should be served warm, but this isn't at all necessary. Its all about the preparation with this one as it pays off to be one step ahead of yourself. I personally don't season this salad because I expect the saltiness from the feta, and the pepper kick from the rocket. Chorizo is an amazing cured sausage and although it is fully cooked and tastes amazing already, it really doesn't hurt to get it a bit crispy on the  pan. The best part about this is it releases its amazing paprika flavour which can be utilized in creating the greatest salad dressing you'll ever taste!!

Ingredients:
80g Chorizo 
100g Spinach
20g Rocket
1/4 Red Onion
1 Garlic Clove
5 Cherry Tomatoes
50g Feta
1 tbsp Olive oil
1 tbsp Red Wine Vinegar

Method:
This is a very quick dish, so preparation is important. Start by slicing the chorizo into 1cm pieces and finely slicing a quarter of a red onion and a clove of garlic as thinly as possible. Chop the cherry tomatoes in two, or leave them whole if you prefer. Put the salad leaves in a bowl along with the onions. 

In a pan, heat up the olive oil, and when its hot enough add the chorizo. The chorizo is already cooked, but what we want is to chrisp it up a bit, and render the fat from the sausage. After a minute, turn the chorizo and give it one more minute on the other side. Remove this from the pan to a paper towel. Distribute evenly over the top of the salad. 

Tilt the pan so that the chorizo oil gathers at one side, and add the garlic in. Cook it for just under a minute. Just before the garlic gets colour on it, add the red wine vinegar. It will start to hiss and smell strongly of the vinegar, but after about 30 seconds the pungency will disappear and you will be left with the most amazing salad dressing.

To finish the salad pour the dressing over the the leaves quite evenly. The vinegar, and heat from this will take away the harshness from the onions very quickly, as they are chopped very thinly. Garnish with the cherry tomatoes and crumbled feta cheese over the top. 

This is a super simple salad, and it packs a punch. This salad speaks for itself and i really recommend having a go at it.
